Well, which is it?
Personally, I really like the Thrawn Trilogy, and the old school Han Solo Trilogy. Also, I've always found Starfighters of Adumar to be enormously entertaining. In the end though, my first EU novel, The Courtship of Princess Leia will always hold a special place in my heart.

Hard to pick a favorite...
Brian Daley's Han Solo trilogy were some of the first novels I ever read, and really inspired me both to read more SF and try to write my own.
Zahn's Thrawn trilogy is excellent. If I were going to introduce someone to the EU, I would start here because these novels are so wonderfully exciting and very Star Wars (and I cannot wait for Zahn's new SW novel, Allegiance. Hurry, January!)
Stackpole and Allston's X-Wing novels are also wonderful, very exciting and lots of fun. Stackpole's I, Jedi is also a classic.
Too many great novels to choose a favorite!

From within the larger Starwars EU? I'd either start with the movie novelisations or with the Timothy Zahan's Thrawn trilogy (Heir to the Empire, Dark Force Rising, and The Last Command). If you are looking for some SF other than SW, I'd say you can't go wrong with the big three: Asimov, Heinlen and Clarke. If you are looking for something other than SF, I'd have to know what exactly you had in mind.

I like the EU books that talk about the history of the Star Wars Universe. I like the novels also, but I like the history part better.

Oooo... I'd have to say my favorite SW book would be... Sacrifice, by Karen Traviss. I loved the duel between Mara and Jacen, and got a bit teary-eyed when she died. *cries*
